Poco Tinto?
I set out to make a red wine that drinks like a white wine.
The concept was to make a light, fresh, early bottled red that can be served chilled if the weather or mood is right. I felt like labeling the wine ‘Poco Tinto’ rather than just varietally as Graciano because, in a certain way, it’s a wine of style rather than variety. The name obviously comes from its striking light color but also the idea that it’s a “small” wine with playful chug-ability.
Winemaking:
The Graciano was hand picked in late August to retain natural acidity. Fermented carbonically as 100% whole clusters placed in a sealed, CO2 sparged stainless tank. Pressed off after 5 days and returned to the tank to finish fermentation. The carbonic fermentation breaks down the malic acid so it doesn’t complete a traditional malolactic fermentation.
